To make these beautiful round shapes, we use a magic tool that looks like a cookie cutter, called emporte-pièce.

The Pesto

The Parisian

The traditional French steak tartare preparation.

Raw beef*, Dijon Mustard, Whole Grain Mustard, onions, capers, Worcestershire sauce, tomato sauce, egg yolks* and a few other ingredients.

We borrowed a famous recipe from our neighbors, the "pesto verde" or green pesto, in which we use a Black Truffle Olive Oil from Maille! Yum!

Raw beef*, home-made Pesto Verde and shaved Parmesan.
